THINK GAZPACHO!
At The Cantata, our
Fruit Gazpacho was made with:
Apples, pears, peaches, all in equal amounts
Tomatoes! as many as you have pieces of fruit (and remember to remove the seeds)
Peppers -- my favorites were yellow and orange
Cucumbers -- again, you're going to want to remove the seeds
Red onion -- probably no more than just 1
The 'dressing' or 'sauce' was made with:
Tomato juice, olive oil, red wine vinegar, orange juice and just a bit of hot sauce.
Because of the oil and vinegar, you're going to want to 'bind' the sauce together and so you can either use a raw egg or a bit of cream -- which is what they do in traditional salad dressings -- or try a banana!
